Roasted Caraway Pork Ribs – Polish Style “Żeberka Wieprzowe”

This recipe is by far my favourite rib recipe. All natural ingredients, without any sugary store bought sauces that our grocery stores are lined with..... AND it's perfect for a Low-Carb of Keto Diet.
Growing up on a small farm
My grandmother use to make these for me when I was a child. I still recall the beautiful aroma that would fill her kitchen as the ribs roasted away in her wood burning tile oven. Oh, I have such fond memories from those days!
I didn't realize back then how lucky I was to know exactly where my food was coming from and how it was raised. These days, like most of us we get our food from a grocery store, or a local farm if we're lucky. Therefore it is very important to buy the best quality pork you can. Go organic if possible.

These Ribs are a PERFECT "Comfort Food"
Roasted Caraway Pork Ribs - Polish "Żeberka Wieprzowe" are a staple in Poland. Pretty much any regional Polish Restaurant will have them on their menu. The recipe may vary slightly by region, but caraway is almost always used to make them. A perfect comfort food!

Side-dishes that are best with these ribs
Generally a side of "Kapusta Zasmażana" - Polish Style Fried Cabbage (Recipe coming soon!) is a must, plus some sort of potatoes. Best low-carb option for potatoes is my Creamy Garlic & Cheese Cauliflower Mashed "Potatoes". But of course it's not against the law to have them all on their own or with your favourite side dishes.
It's a perfect comfort meal any time of the year, but especially in the cooler months.
Here is what you'll need to make these delicious, fall of the bone pork ribs:
- 1 Rack Organic Pork Back or Side Ribs
- 1 Tablespoon Extra Virgin Olive Oil
- 1 Large Cooking Onion
- 2 Tablespoons Caraway*
- 350ml (1.5 Cups) Water
- Pinch of Salt & Pepper
*Fun Fact: Caraway, also known as meridian fennel, and Persian cumin (Carum carvi), is a biennial plant in the family Apiaceae, native to western Asia, Europe, and North Africa.

Lets get started...
Cut your rack of ribs into 4 pieces.

Place them in a large glass or stainless steel bowl.

Add onion, caraway, olive oil, salt and pepper.

Mix all the ingredients well, making sure the ribs are nicely coated.

Place the ribs into a cast iron pan or pot and add 350ml (1.5 Cups) water.

Cover with a tight fitting lid, and roast for 3 hours at 300 Degrees Fahrenheit (150 Degrees Celsius).
Depending on the pot/pan you are using, may want to have a peak every hour to make sure there is enough water left in the pot/pan and also coat your ribs with some of the juices.

Ingredients
- 1 Rack Organic Pork Back or Side Ribs
- 1 Tablespoon Extra Virgin Olive Oil

- 350ml (1.5 Cups) Water
