Cauliflower Mashed Potatoes – Creamy Garlic & Cheese

Description

Looking for a mashed potato substitute?…Look no further! These Golden Creamy Garlic & Cheese Cauliflower Mashed “Potatoes” are a perfect Low-Carb alternative.


Ingredients

  • 1kg – Fresh Cauliflower (1-2 Cauliflowers depending on size)
  • 70g – Extra Old Yellow Cheddar Cheese (3-5 Year old is best)
  • 1/2 tsp – Minced Garlic
  • 80ml (1/3 Cup) – Heavy Cream 35%
  • 25g – Unsalted Butter
  • 1/4 Teaspoon – Onion Powder
  • Pinch of Salt
  • Pinch of Pepper
  • Optional – Fresh Chives or Green Onion

Instructions

  1. Wash your cauliflower and cut it up into smaller pieces. Fill the bottom of a stockpot with 2 inches of water and bring to a boil. Place a steamer insert into the pot and add the cauliflower. Cover with a tight fitting lid and steam over medium-high heat until the cauliflower is nice and soft (about 10 minutes).
  2. Remove the steamed cauliflower from the stove,  empty out any remaining water from the pot, and let it it cool slightly. This will also help remove any extra moisture.
  3. In the mean time, in a large non-stick pan or pot, add butter, heavy cream and cheese. Melt slowly over low/medium heat stirring the mixture frequently to combine the melting ingredients. Once the ingredients are fully melted, add some minced garlic and continue to stir the mixture. Once combined, you can leave it on the stove on low heat while you process the steamed cauliflower.
  4. Place steamed cauliflower in your food processor with a “S” blade attachment for about 2-3 minutes or until nice and smooth.
  5. In a large non-stick pan or pot over low/medium heat, combine the creamed cauliflower and melted cheese mixture. Add onion powder, and a pinch of slat and pepper. Stir all the ingredients until fully combined.
  6. Top with some chives or green onion and enjoy!

Notes

  • I’m a big fan of making bigger batches so I may freeze some for later. They freeze super well and when I need a quick side dish for one of my meals I just pop a container out of the freezer.
  • Bacon also makes a delicious topping!
